Ingredients
Chicken Kofta
- 500 grams ground chicken
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1/4 cup fresh parsley, finely chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 tablespoons olive oil (for grilling)
Garlic Yogurt Sauce
- 1 cup plain yogurt
- 2 tablespoons freshly squeezed lemon juice
- Pinch of salt
Instructions
- Prepare the Kofta Mixture: In a large bowl, combine the ground chicken, finely chopped onion, minced garlic, fresh parsley, ground cumin, ground coriander, salt, and black pepper. Mix thoroughly until all ingredients are evenly incorporated.
- Shape the Koftas: Form the chicken mixture into small oval-shaped koftas, ensuring they are compact enough to hold their shape during cooking.
- Preheat the Grill: Preheat your grill to medium-high heat and brush the grill grates with olive oil to prevent sticking.
- Grill the Koftas: Place the koftas on the grill and cook for about 10-12 minutes, turning occasionally to ensure even cooking until the koftas are fully cooked through and have a nice char.
- Make the Garlic Yogurt Sauce: While the koftas cook, mix the plain yogurt, freshly squeezed lemon juice, and a pinch of salt in a separate bowl until smooth and well combined.
- Serve: Plate the grilled chicken koftas and serve them with the garlic yogurt sauce on the side for dipping or drizzling.
Notes
- You can substitute fresh parsley with cilantro if preferred.
- If a grill is not available, koftas can also be cooked in a skillet with a little olive oil over medium heat.
- Adjust the spices according to your taste for more or less heat.
- To keep koftas moist, avoid overcooking and monitor them closely on the grill.
- The garlic yogurt sauce can be enhanced by adding minced garlic or fresh herbs like dill or mint.
