1 lb lean ground beef
4 to 6 medium Russet potatoes
1 packet (1 ounce) taco seasoning
½ cup water
Shredded cheese (cheddar, Monterey Jack, or your choice)

Prepare the Potatoes:

Preheat the oven to 400°F (200°C).

Wash and prick the russet potatoes with a fork. Bake directly on the oven rack for 40-45 minutes or until tender.

Once baked, let the potatoes cool slightly and cut into halves or quarters.

Cook the Ground Beef:

While the potatoes bake, cook the ground beef in a skillet over medium-high heat for 5-7 minutes until browned.

Drain the fat, then stir in taco seasoning and water. Let it simmer for 5-6 minutes until the sauce thickens.

Assemble the Dish:

Scoop out a bit of potato flesh from each half to create space.

Spoon the seasoned beef mixture into each potato half and sprinkle with shredded cheese.

Return the stuffed potatoes to the oven and bake for 5-10 minutes, or until the cheese is melted and bubbly.

Add sour cream, salsa, or chopped cilantro as toppings for extra flavor.
For a spicier kick, add jalapeños or chili powder to the beef mixture.
Use sweet potatoes instead of russet for a unique flavor twist.
