Ingredients

1 lb lean ground beef

4 to 6 medium Russet potatoes

1 packet (1 ounce) taco seasoning

½ cup water

Shredded cheese (cheddar, Monterey Jack, or your choice)

Instructions

  • Prepare the Potatoes:

    • Preheat the oven to 400°F (200°C).

    • Wash and prick the russet potatoes with a fork. Bake directly on the oven rack for 40-45 minutes or until tender.

    • Once baked, let the potatoes cool slightly and cut into halves or quarters.

  • Cook the Ground Beef:

    • While the potatoes bake, cook the ground beef in a skillet over medium-high heat for 5-7 minutes until browned.

    • Drain the fat, then stir in taco seasoning and water. Let it simmer for 5-6 minutes until the sauce thickens.

  • Assemble the Dish:

    • Scoop out a bit of potato flesh from each half to create space.

    • Spoon the seasoned beef mixture into each potato half and sprinkle with shredded cheese.

  • Melt the Cheese:

    • Return the stuffed potatoes to the oven and bake for 5-10 minutes, or until the cheese is melted and bubbly.

Notes

Add sour cream, salsa, or chopped cilantro as toppings for extra flavor.

For a spicier kick, add jalapeños or chili powder to the beef mixture.

Use sweet potatoes instead of russet for a unique flavor twist.
