1 cup shredded mozzarella cheese
½ cup grated parmesan cheese
1 cup panko breadcrumbs
2 large eggs
Salt and pepper to taste
Fresh parsley (optional)
Instructions

Preheat oven to 400°F (200°C) if baking, or heat oil to 350°F (175°C) for frying.

Beat eggs in a bowl, seasoning with salt and pepper.

Mix mozzarella, parmesan, and parsley (if using) in another bowl.

Shape cheese mixture into small bite-sized balls.

Dip each ball into the beaten eggs, then roll in panko breadcrumbs until fully coated.

To bake: Place bites on parchment-lined sheet; bake 12–15 minutes until golden and crispy.

To fry: Fry bites 2–3 minutes until golden brown; drain on paper towels.

Notes
For extra flavor, add garlic powder or Italian seasoning to the breadcrumbs.
Substitute part of the mozzarella with cheddar for a sharper taste.
