Ingredients
Roasted Garlic
- 3 heads of garlic
- Drizzle of olive oil
- Kosher salt (as needed)
Dip Mixture
- 2 cloves fresh garlic (grated or pressed)
- 8 ounce block cream cheese (room temperature)
- ½ cup ricotta cheese (room temperature)
- ¼ cup sour cream
- ¼ cup grated parmesan cheese
- ½ teaspoon garlic powder
- 2 tablespoons chopped parsley
- 1 tablespoon chopped chives
- ½ cup Asiago cheese (or more mozzarella as substitute)
- 1 cup shredded mozzarella cheese
- 2 teaspoons white truffle oil (optional)
Serving
- Crostini, crackers, or chips for serving
Instructions
- Preheat Oven: Position a rack in the center of the oven and preheat to 375ºF to prepare for roasting the garlic.
- Prepare Garlic: Trim the tops off the garlic heads to expose the cloves. Drizzle with olive oil, sprinkle with salt and pepper, then wrap each head tightly in foil. Place the foil-wrapped garlic on a baking sheet.
- Roast Garlic: Roast the garlic in the preheated oven for 40 to 55 minutes, or until the cloves are soft and tender when pierced with a knife or fork. Once done, remove from the oven and allow to cool before squeezing out the roasted garlic paste.
- Mix Dip Ingredients: In a medium bowl, mash the roasted garlic until it becomes a smooth paste. Add salt, grated fresh garlic, cream cheese, ricotta, sour cream, parmesan, garlic powder, parsley, chives, and Asiago cheese. Mix thoroughly with a rubber spatula until well combined. Taste and adjust seasonings if necessary.
- Prepare for Baking: Transfer the garlic cheese mixture to a small baking dish that has been sprayed with cooking spray. Evenly top the dip with shredded mozzarella cheese.
- Bake the Dip: Increase oven temperature to 400ºF. Bake the dip in the preheated oven for 15 to 20 minutes until the cheese melts completely. To achieve a golden, bubbly top, switch the oven to broil and broil for 15 to 60 seconds, watching closely to avoid burning.
- Serve: Drizzle the baked dip with white truffle oil if using. Serve warm alongside crostini slices, crackers, or potato chips for dipping.
Notes
- You can prepare the roasted garlic ahead of time by roasting and refrigerating it up to 3 days in advance.
- If Asiago cheese is unavailable, substitute with additional mozzarella for a milder flavor.
- Use caution when broiling as the cheese topping can burn quickly; keep a close eye during this step.
- White truffle oil is optional but adds an elegant aroma and depth to the dip.
- To make the dip more garlicky, add extra grated fresh garlic according to preference.
