Ingredients

Pizza Base

  • 12 oz. pizza dough (at room temp.)
  • 1 tablespoon olive oil
  • 2 tablespoons parmesan cheese (grated)
  • ¼ teaspoon dried oregano
  • 1 tablespoon butter (melted)

Toppings

  • ½ cup marinara sauce
  • 1 ¾ cups mozzarella cheese (whole milk/low moisture)
  • 14 slices pepperoni
  • ¼ cup sliced onions and peppers

Instructions

  1. Preheat the oven: Preheat your oven to 475°F and ideally allow it to heat for 30 minutes to ensure the cast iron skillet reaches an optimal temperature for baking the pizza.
  2. Prepare the dough: If your dough weighs 1 lb, remove a quarter so that you’re using about 12 oz. Roll the dough into a 14-inch circle on a lightly floured surface.
  3. Place dough in skillet: Spray a 12-inch cast iron skillet with nonstick cooking spray. Transfer the dough to the skillet and press it halfway up the sides. Roll the edge downward to form a defined crust.
  4. Brush and season dough: Use a pastry brush to spread 1 tablespoon of olive oil over the dough’s surface. Sprinkle evenly with Parmesan cheese and dried oregano. Poke holes in the dough with a fork to vent air and prevent bubbling.
  5. Par-bake crust: Place the skillet on the lower oven rack and bake for 5 minutes. Remove the skillet, dab away excess oil with a paper towel, and press the crust down flat in the skillet.
  6. Add toppings: Spread marinara sauce over the crust, then sprinkle with mozzarella cheese, pepperoni slices, and the sliced onions and peppers.
  7. Bake pizza: Return the pizza to the lower rack and bake for 10 minutes.
  8. Final crust brushing and finish baking: Remove the pizza and brush the crust with melted butter. Move the skillet to the upper rack and bake for 3 more minutes. Then broil at 425°F for 1 minute, watching very closely to prevent burning.
  9. Rest and serve: Allow the pizza to rest in the skillet for 3-5 minutes. Tilt the skillet and carefully slide the pizza onto a cutting board. Slice and serve.
