Ingredients
For the Salmon Sliders
- 1-½ lbs salmon (skin removed)
- Kosher salt, to taste
- Fresh cracked pepper, to taste
- Cajun seasoning, to taste
- Old Bay seafood seasoning, to taste
- Arugula leaves, for layering
- Slider buns (5-6 buns)
- Alexia Brand Onion Rings (1 per slider)
For the Remoulade Sauce
- 1 cup mayonnaise
- ¼ cup finely chopped green onion
- 2 tsp chopped garlic
- 1 tbsp prepared horseradish
- 2 tbsp German whole-grain mustard
- 3 tsp yellow mustard
- 3 tbsp ketchup
- 1 tsp hot sauce
- 1 tsp Worcestershire sauce
- Pinch kosher salt
- ½ tsp cayenne pepper
- ½ tsp Cajun seasoning
- 1 tsp fresh cilantro leaves, minced
- 1 tsp finely diced fresh jalapeno
Instructions
- Prepare the Remoulade: In a bowl, combine mayonnaise, finely chopped green onion, chopped garlic, horseradish, German whole-grain mustard, yellow mustard, ketchup, hot sauce, Worcestershire sauce, kosher salt, cayenne pepper, Cajun seasoning, minced cilantro leaves, and finely diced jalapeno. Mix thoroughly until smooth. Cover and refrigerate for at least 30 minutes to allow flavors to blend.
- Preheat the Oven: Set your oven to 400°F (204°C) to prepare for baking the salmon and onion rings.
- Season the Salmon: Cut the salmon into square portions sized to fit your slider buns. Season each piece generously with kosher salt, fresh cracked pepper, Old Bay seafood seasoning, and Cajun seasoning. Place the seasoned salmon pieces on a rack set over a rimmed baking sheet to ensure even cooking.
- Bake the Salmon and Onion Rings: Place the salmon in the preheated oven and bake for about 10 minutes, or until the salmon is just cooked through and flakes easily with a fork. Simultaneously, bake the onion rings according to the package instructions until crispy.
- Assemble the Sliders: On the bottom half of each slider bun, layer fresh arugula leaves followed by a piece of baked salmon. Add a generous spoonful of remoulade sauce on top of the salmon, then place a crispy onion ring over the sauce. Spread some remoulade on the top bun as well to help hold the slider together, then close the slider. Serve immediately.
Notes
- To keep the salmon moist, avoid overbaking; check for doneness at 10 minutes.
- If you prefer less heat, reduce or omit the cayenne pepper and jalapeno in the remoulade.
- Use fresh arugula for a peppery bite; baby spinach can be substituted if desired.
- The remoulade sauce can be made a day ahead to deepen the flavors.
- Slider buns can be lightly toasted if preferred for added texture.
