Ingredients

2 tbsp olive oil

½ large yellow onion, finely diced

1½ tsp brown sugar

¼ cup mayonnaise

¼ cup plain Greek yogurt

1 tsp apple cider vinegar

½ tsp garlic powder

1 lb ground beef (80–85% lean)

Kosher salt and freshly ground black pepper, to taste

For serving: roasted potatoes or French fries, sliced tomatoes, romaine lettuce

Instructions

  1. Caramelize the onions: Heat 1 tbsp olive oil in a skillet over medium-low heat. Add diced onion and brown sugar; cook 10–15 minutes, stirring often, until golden and soft. Let cool slightly.
  2. Prepare the aioli: In a small bowl, mix mayonnaise, Greek yogurt, apple cider vinegar, garlic powder, and caramelized onions. Season with salt and pepper to taste and refrigerate.
  3. Cook the beef: Heat remaining 1 tbsp olive oil in a large skillet over medium-high heat. Add ground beef, season with salt and pepper, and cook 6–8 minutes until browned and cooked through. Drain excess fat if needed.
  4. Assemble the bowls: Layer romaine lettuce in bowls, then top with beef, roasted potatoes or fries, and sliced tomatoes. Drizzle or dollop with caramelized onion aioli.
  5. Serve: Garnish with extra onions or herbs if desired. Serve warm.
