Chicken and Coating
- 1 pound boneless skinless chicken breasts, cut into 1 inch pieces
- 1/3 cup flour
- 3 tablespoons cornstarch
- 1/8 teaspoon cayenne pepper
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1/3 cup buffalo wing sauce (Frank’s Buffalo Wing Sauce)
Wrap Assembly
- Burrito size tortillas
- Ranch dressing
- Diced tomatoes
- Finely chopped lettuce
- Mexican cheese blend
Instructions
- Prepare the skillet: Heat a large skillet over medium-high heat to get it hot and ready for cooking the chicken.
- Coat the chicken: In a large bowl, combine the cornstarch, flour, cayenne pepper, garlic powder, salt, and pepper. Season the chicken pieces with pepper, then dredge each piece evenly in the flour mixture to create a light coating.
- Cook the chicken: Add 1 tablespoon olive oil to the skillet and allow it to heat up. Place the coated chicken pieces into the pan and cook for about 3 to 4 minutes on each side until golden brown and cooked through.
- Toss chicken in buffalo sauce: Remove the cooked chicken from the pan and transfer it to a bowl. Toss the chicken pieces with 1/3 cup of buffalo wing sauce until they are well coated with the spicy sauce.
- Warm the tortillas: Use the same skillet to lightly fry the burrito-sized tortillas. Cook each side for about 10 seconds on medium heat to soften them and add a slight toast.
- Assemble the wraps: Place a scoop of buffalo chicken onto each warmed tortilla. Add a drizzle of ranch dressing, a handful of finely chopped lettuce, diced tomatoes, and sprinkle with Mexican cheese blend. Wrap them up tightly and serve immediately.
Notes
- For extra heat, increase the amount of cayenne pepper or add hot sauce to the buffalo wing sauce.
- Chicken can be prepped ahead of time and kept warm in a low oven before tossing with sauce.
- If preferred, substitute ranch dressing with blue cheese dressing for a richer flavor.
- To make this recipe gluten-free, substitute the flour with a gluten-free all-purpose flour blend.
- Use fresh tortillas or warm them on a griddle for softer wraps.
