Instructions
- Cook the pasta: Prepare the pasta according to the package instructions until al dente. Then drain and set aside.
- Sauté the vegetables: In a large pan over medium heat, melt the butter. Add the diced onions, carrots, and celery, and cook until they become tender, about 5 to 8 minutes.
- Add garlic: Stir in the chopped garlic and cook for about 1 minute until fragrant, being careful not to burn it.
- Make the sauce: Pour in the chicken broth, hot sauce, and heavy cream. Add the cheddar cheese, cream cheese, and blue cheese (if using). Stir continuously as the cheese melts and the sauce comes together smoothly.
- Add chicken and seasoning: Add the cooked shredded chicken and ranch seasoning (if using) to the sauce. Bring the mixture to a simmer, allowing the flavors to meld and the sauce to thicken slightly.
- Combine pasta with sauce: Add the drained pasta to the pan and toss gently to coat the pasta evenly in the buffalo sauce.
- Finish and serve: Sprinkle the thinly sliced green onions over the top before serving to add a fresh, crisp contrast to the creamy, spicy pasta.
