Wet Ingredients
- ½ cup unsalted butter (113 grams)
- 3/4 cup granulated sugar (165 grams)

- 3 large very ripe bananas (350 grams)

- 1 ½ cups all-purpose flour (210 grams)
- 2 ½ teaspoons baking powder
- 1 teaspoon Diamond Crystal kosher salt (use ½ teaspoon if using Morton’s kosher salt)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare it for baking the banana bread.
- Brown the Butter: In a small saucepan, melt the butter over medium heat. Allow it to foam and cook for 3 to 5 minutes, stirring occasionally until brown specks form at the bottom and the butter has a nutty aroma. Transfer to a bowl and whisk to cool slightly.
- Mix Sugar and Butter: Whisk together the slightly cooled browned butter and granulated sugar vigorously for about a minute until well combined and slightly creamy.
- Add Eggs and Vanilla: Crack in the eggs and add the vanilla extract. Continue whisking vigorously until the mixture is smooth and glossy.
- Mash Bananas and Combine: Add the very ripe bananas to the bowl. Use a fork to mash them into small pieces, keeping some texture. Then whisk together with the wet mixture until combined.
- Add Dry Ingredients: Add the all-purpose flour, baking powder, and kosher salt to the wet mixture. Stir gently with a spatula or spoon until just combined into a thick batter. Do not overmix.
- Prepare for Baking: Line a loaf pan with parchment paper and transfer the batter evenly into it, smoothing the top.
- Bake: Bake the banana bread in the preheated oven at 375°F for 50 to 55 minutes. The bread should be golden brown and a toothpick inserted in the center should come out with a few moist crumbs.
- Cool and Serve: Remove from oven and let cool in the pan for about 10 minutes before transferring to a wire rack to cool completely. Slice and enjoy!

- Use very ripe bananas with lots of brown spots for maximum sweetness and moisture.
- Browned butter adds a deeper, nutty flavor compared to melted butter.
- Do not overmix the batter once the flour is added to avoid tough bread.
