Ingredients
1/4 cup fat-free Italian salad dressing
1/2 teaspoon sugar
1/8 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon curry powder
1/8 teaspoon paprika
1/8 teaspoon pepper
2 cod fillets (6 ounces each)
2 teaspoons butter
Instructions
- Preheat broiler and line a baking sheet with foil.
- In a small bowl, combine Italian dressing, sugar, salt, garlic powder, curry powder, paprika, and pepper.
- Place cod fillets on the prepared baking sheet and brush generously with the dressing mixture.
- Cut butter into small pieces and place on top of each fillet.
- Broil 6–8 inches from the heat source for 6–8 minutes, or until fish flakes easily with a fork.
- Serve immediately with your favorite sides, such as steamed vegetables or rice.
Notes
Swap cod for haddock, tilapia, or halibut.
Add a squeeze of fresh lemon juice before serving for extra brightness.
Sprinkle with fresh herbs like parsley or dill for garnish.
For a spicier kick, add a pinch of cayenne or chili flakes to the marinade.
