A light, flavorful, and healthy seafood dish featuring tender cod fillets broiled with a simple Italian dressing marinade and subtle spices, ready in under 20 minutes.

Ingredients

1/4 cup fat-free Italian salad dressing

1/2 teaspoon sugar

1/8 teaspoon salt

1/8 teaspoon garlic powder

1/8 teaspoon curry powder

1/8 teaspoon paprika

1/8 teaspoon pepper

2 cod fillets (6 ounces each)

2 teaspoons butter

Instructions

  1. Preheat broiler and line a baking sheet with foil.
  2. In a small bowl, combine Italian dressing, sugar, salt, garlic powder, curry powder, paprika, and pepper.
  3. Place cod fillets on the prepared baking sheet and brush generously with the dressing mixture.
  4. Cut butter into small pieces and place on top of each fillet.
  5. Broil 6–8 inches from the heat source for 6–8 minutes, or until fish flakes easily with a fork.
  6. Serve immediately with your favorite sides, such as steamed vegetables or rice.
