Ingredients
Chicken
- 3 chicken breasts (trimmed and pounded flat)
- ½ tsp oregano
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp kosher salt
- ½ tsp pepper
- 3 tbsp extra virgin olive oil
Potatoes and Vegetables
- ½ lb petite gold potatoes (sliced in half)
- 1 small shallot (minced)
Liquids and Cheese
- ¾ cup chicken broth
- 1 wheel Boursin cheese (5.2 oz block, any flavor)
Garnish
- 2 tbsp Italian parsley (chopped)
Instructions
- Preheat Oven: Preheat your oven to 425 degrees Fahrenheit to prepare for baking the chicken and potatoes later.
- Season Chicken: Pound the chicken breasts flat for even cooking, then season both sides evenly with oregano, garlic powder, onion powder, kosher salt, and pepper.
- Sear Chicken: Heat olive oil in a large pan over medium-high heat. Sear the chicken breasts for 3-5 minutes on each side until a golden crust forms. Remove the chicken and set aside.
- Sauté Potatoes and Shallots: Add the halved petite gold potatoes to the pan and sauté for 5 minutes. Stir in the minced shallot and cook for another 1-2 minutes until aromatic.
- Deglaze and Make Sauce: Remove the potatoes from the pan. Pour in the chicken broth to deglaze the pan, scraping up any browned bits. Reduce heat to low and whisk in the Boursin cheese until fully melted and creamy.
- Bake Dish: Return the chicken breasts and potatoes to the pan, coating them with the cheese sauce. Transfer the pan to the oven and bake for 10-15 minutes, or until the chicken reaches an internal temperature of 165°F and the potatoes are tender when pierced with a fork.
- Garnish and Serve: Remove the pan from the oven, sprinkle the chopped Italian parsley over the top, and serve warm.
Notes
- Use any flavor of Boursin cheese according to your preference, such as garlic and herbs or shallot and chive.
- To ensure even cooking, pound the chicken breasts to an even thickness before seasoning.
- If you don’t have petite gold potatoes, small Yukon Gold or baby red potatoes work well as substitutes.
- Check the internal temperature of the chicken with a meat thermometer for food safety.
- This dish can be prepared ahead by searing the chicken and sautéing the potatoes, then baking just before serving.
