A hearty and comforting Biscuits and Gravy Casserole combining flaky biscuit dough, savory sausage gravy, fluffy eggs, and melted Colby Jack cheese baked to perfection for a delicious breakfast or brunch.

  • Total Time: 1 hour
  • Yield: 8 servings

Ingredients

Biscuits and Base

  • 8 count package of biscuit dough (like Pillsbury Grands, slightly bigger biscuits)

Egg Mixture

  • 6 eggs
  • 1/2 cup milk
  • Salt and pepper to taste

Sausage and Cheese

  • 1 package peppered gravy mix or white breakfast gravy mix (makes 2 cups) or 2 cups of homemade sausage gravy
  • 1 and 1/2 cups Colby Jack cheese, shredded
  • Sausage (quantity not specified, assume 1 lb ground breakfast sausage)

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch casserole dish with nonstick spray to prevent sticking.
  2. Cook Sausage: Brown the sausage in a skillet over medium heat until fully cooked and no longer pink, then drain excess fat thoroughly. Set aside the cooked sausage.
  3. Prepare Biscuit Base: Cut each biscuit dough piece into 4 smaller pieces. Evenly distribute these biscuit pieces across the bottom of the prepared casserole dish to form the base layer.
  4. Layer Sausage and Cheese: Spread the cooked, crumbled sausage evenly over the biscuit pieces. Then sprinkle the shredded Colby Jack cheese evenly on top of the sausage layer.
  5. Mix and Pour Egg Mixture: In a small bowl, whisk together the eggs, milk, salt, and pepper until fully combined. Pour this egg mixture evenly over the cheese-covered biscuit and sausage layers.
  6. Prepare and Add Gravy: Prepare the sausage gravy according to the package instructions if using a mix, or prepare homemade gravy if preferred. While still hot, pour approximately 2 cups of the gravy evenly over the entire casserole.
  7. Bake: Place the casserole dish in the preheated oven and bake for about 40 minutes, or until the eggs are set and the biscuit dough is cooked through and golden.
  8. Serve: Remove from oven and let slightly cool. Serve the casserole warm for a filling breakfast or brunch meal.

Notes

  • You can substitute homemade sausage gravy for a more authentic flavor by using ground sausage, flour, milk, and seasoning.
  • Ensure the sausage is completely cooked and drained to avoid greasy casserole.
  • Use larger biscuit dough like Pillsbury Grands for optimal texture and size.
  • The casserole can be prepared the night before; refrigerate assembled, then bake fresh the next morning.
  • Adjust salt and pepper according to taste especially if using gravy mix which can be salty.
