Biscuits and Base
- 8 count package of biscuit dough (like Pillsbury Grands, slightly bigger biscuits)
Egg Mixture
- 6 eggs
- 1/2 cup milk

Sausage and Cheese
- 1 package peppered gravy mix or white breakfast gravy mix (makes 2 cups) or 2 cups of homemade sausage gravy
- 1 and 1/2 cups Colby Jack cheese, shredded
- Sausage (quantity not specified, assume 1 lb ground breakfast sausage)
Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch casserole dish with nonstick spray to prevent sticking.
- Cook Sausage: Brown the sausage in a skillet over medium heat until fully cooked and no longer pink, then drain excess fat thoroughly. Set aside the cooked sausage.
- Prepare Biscuit Base: Cut each biscuit dough piece into 4 smaller pieces. Evenly distribute these biscuit pieces across the bottom of the prepared casserole dish to form the base layer.
- Layer Sausage and Cheese: Spread the cooked, crumbled sausage evenly over the biscuit pieces. Then sprinkle the shredded Colby Jack cheese evenly on top of the sausage layer.
- Mix and Pour Egg Mixture: In a small bowl, whisk together the eggs, milk, salt, and pepper until fully combined. Pour this egg mixture evenly over the cheese-covered biscuit and sausage layers.
- Prepare and Add Gravy: Prepare the sausage gravy according to the package instructions if using a mix, or prepare homemade gravy if preferred. While still hot, pour approximately 2 cups of the gravy evenly over the entire casserole.
- Bake: Place the casserole dish in the preheated oven and bake for about 40 minutes, or until the eggs are set and the biscuit dough is cooked through and golden.
- Serve: Remove from oven and let slightly cool. Serve the casserole warm for a filling breakfast or brunch meal.
