Salmon Patties
- 1¼ pound salmon filet
- 4 tablespoons extra-virgin olive oil (divided)
- 1 teaspoon fine sea salt (divided)
- ½ cup mayonnaise
- 2 large eggs
- 2 green onions (thinly sliced)
- ¾ cup bread crumbs
- ⅓ cup all-purpose flour
- 2 tablespoons Dijon mustard
- ¼ teaspoon black pepper
- Flaky sea salt (to finish, optional)
Instructions
- Preheat Oven: Preheat your oven to 375℉ to prepare for baking the salmon.
- Prepare Salmon: Brush the salmon filet with 1 tablespoon of olive oil and season it evenly with ½ teaspoon of fine sea salt to enhance the flavor.
- Bake Salmon: Place the salmon in the oven and bake for 12-15 minutes, or until it flakes easily with a fork at its thickest point. Remove from the oven and let it cool slightly.
- Mix Ingredients: In a large bowl, combine the baked salmon, mayonnaise, eggs, thinly sliced green onions, bread crumbs, all-purpose flour, Dijon mustard, and black pepper. Mash with a fork until the mixture is smooth and well combined.
- Form Patties: Shape the salmon mixture into 4 to 6 equal-sized patties for even cooking.
- Heat Skillet: Heat the remaining 3 tablespoons of olive oil in a large skillet over medium heat. Wait until the oil shimmers and moves easily when the pan is tilted.
- Cook Patties: Add the salmon patties to the hot skillet and cook for 3 to 4 minutes on one side until they are darkened in color and start to crisp. Flip the patties and cook for another 3 to 4 minutes on the second side until fully cooked and crispy.
