Beef Tips

Mushroom Gravy
- 2 Tablespoons butter

- 8 ounces sliced mushrooms

- 1 teaspoon dried thyme
- 1 Tablespoon cornstarch

Instructions
- Prepare and Season Beef: Pat the beef tenderloin tips dry with paper towels. Season evenly with kosher salt and freshly ground black pepper to enhance the natural flavors.
- Brown the Beef Tips: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned beef tips and sear them until browned on all sides, about 3-4 minutes. Remove the beef from the skillet and set aside.
- Sauté Aromatics and Mushrooms: In the same skillet, melt 2 tablespoons of butter over medium heat. Add the sliced onions and cook until they become translucent, approximately 3 minutes. Then add the sliced mushrooms and cook, stirring occasionally, until they release their moisture and begin to brown, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
- Deglaze and Build Gravy: Pour in 1 ½ cups of beef broth, scraping the bottom of the skillet to release any browned bits. Stir in 2 teaspoons Worcestershire sauce and 1 teaspoon dried thyme. Bring the mixture to a simmer.
- Thicken the Gravy: In a small bowl, combine 1 tablespoon cornstarch with 2 tablespoons cold water to create a slurry. Slowly whisk the slurry into the simmering gravy, stirring constantly until the sauce thickens, about 2-3 minutes. Season with salt and pepper to taste.
- Combine and Finish Cooking: Return the browned beef tips to the skillet with the mushroom gravy. Reduce heat to low and let everything simmer together for 3-5 minutes, allowing the beef to finish cooking and soak up the flavors without overcooking.
- Serve: Serve the beef tenderloin tips smothered in the mushroom gravy over mashed potatoes, rice, or noodles for a delicious meal.
