- ¾ cup packed dark brown sugar (165g)
- ½ teaspoon ground cinnamon
- ⅓ cup rum (80mL)

Instructions
- Prepare the Sauce: In a large skillet over medium heat, melt the unsalted butter. Once melted, add the dark brown sugar and ground cinnamon. Stir continuously until the sugar dissolves and the mixture is smooth and bubbling.
- Add the Bananas: Place the banana halves into the skillet, cut side down. Cook for 2-3 minutes to caramelize the bananas, then gently turn them over to warm the other side for an additional 1-2 minutes. Be careful not to overcook to avoid mushiness.
- Flambé with Rum: Remove the skillet from the heat briefly, then carefully add the rum. Return the skillet to the heat and tilt it to ignite the alcohol, flambéing the bananas. Allow the flames to subside naturally, which should take about 30 seconds. This step is optional but adds a rich flavor.
- Serve: Spoon the bananas and sauce over scoops of vanilla ice cream while warm. Serve immediately to enjoy the contrast of hot caramelized bananas and cold ice cream.
Notes
- Use ripe but firm bananas to prevent them from turning mushy during cooking.
- The flambé step requires caution—keep a fire extinguisher nearby and do not wear loose clothing.
- If you prefer a non-alcoholic version, substitute rum with orange juice or omit it completely.
- For added texture, sprinkle chopped toasted pecans on top before serving.
