Zucchini Fries
- 2 medium zucchinis
- 1 egg
- 1 cup grated Parmesan cheese

Lemon Parsley Aioli
- ½ cup mayonnaise
- 1 lemon, juiced
- 1 garlic clove, minced
- 1 tablespoon finely chopped parsley
- Salt and pepper, to taste
Instructions
- Prepare Zucchini: Preheat your oven to 425°F (220°C). Wash and slice the zucchinis into fry-like sticks, about 3-4 inches long and ½ inch thick.
- Make Coating Mixture: In a shallow bowl, whisk the egg until smooth. In another bowl, combine grated Parmesan cheese, garlic powder, and Italian seasoning.
- Coat the Zucchini: Dip each zucchini stick into the egg, allowing excess to drip off, then roll it in the Parmesan cheese mixture to coat evenly. Place coated fries on a baking sheet lined with parchment paper.
- Bake Fries: Arrange zucchini fries in a single layer on the baking sheet, ensuring they don’t touch. Bake in the preheated oven for 20-25 minutes, turning halfway through, until fries are golden brown and crispy.
- Prepare Lemon Parsley Aioli: While the fries bake, combine mayonnaise, lemon juice, minced garlic, and chopped parsley in a small bowl. Season with salt and pepper to taste, stirring well.
- Serve: Remove fries from the oven and let them cool slightly. Serve warm with the lemon parsley aioli for dipping.
