Ingredients
Donuts
- 1 cup full-fat cottage cheese
- 2 large eggs
- 1/3 cup granulated sugar
- 3 tablespoons melted unsalted butter
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 2 teaspoons baking powder
- ¼ teaspoon salt
Glaze
- 1 cup powdered sugar
- 2 tablespoons milk
- ½ teaspoon vanilla extract
Instructions
- Preheat the oven: Set your oven to 350°F (175°C) and grease a donut pan lightly with butter or non-stick spray to ensure the donuts will release easily after baking.
- Mix wet ingredients: In a large bowl, combine the full-fat cottage cheese, eggs, granulated sugar, melted unsalted butter, and vanilla extract. Whisk together until the mixture is smooth and well combined.
- Combine dry ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt to evenly distribute the leavening agent and salt throughout the flour.
- Blend wet and dry: Gradually add the dry ingredients to the wet cottage cheese mixture. Stir gently but thoroughly until just combined; be careful not to overmix to maintain lightness in the batter.
- Fill the donut pan: Spoon the batter evenly into the prepared donut pan, filling each mold about 2/3 full to allow room for rising.
- Bake the donuts: Place the pan in the preheated oven and bake for 15-18 minutes or until the donuts are golden and a toothpick inserted into the center comes out clean.
- Cool the donuts: Remove the pan from the oven and allow the donuts to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
- Prepare the glaze: While the donuts are cooling, whisk together powdered sugar, milk, and vanilla extract in a small bowl until smooth and runny enough to drizzle.
- Glaze the donuts: Dip the tops of the cooled donuts into the glaze or drizzle it evenly over the donuts using a spoon. Let the glaze set for a few minutes before serving.
Notes
- Using full-fat cottage cheese adds richness and moisture resulting in tender donuts.
- Do not overmix the batter to avoid dense donuts; mix just until ingredients are combined.
- Ensure the donut pan is greased well to prevent sticking.
- If you prefer, substitute milk with any milk alternative in the glaze to accommodate dietary preferences.
- Store donuts in an airtight container at room temperature for up to 2 days or refrigerate for up to 4 days.
