Ingredients

1 egg

1/2 tablespoon mozzarella

2 1/2 tablespoons almond flour

1/2 tablespoon psyllium husk

1/4 tablespoon coconut oil

1/2 tablespoon almond milk

1/2 tablespoon coconut flour

Instructions

  • In a mixing bowl, combine the egg, mozzarella, almond flour, psyllium husk, coconut oil, almond milk, and coconut flour.

  • Stir until the mixture forms a thick and sticky dough.

  • Use your hands to shape the dough into small dumplings, about 1-1.5 inches in diameter.

  • Bring a pot of water or broth to a boil, then carefully drop the dumplings into the boiling liquid.

  • Reduce the heat to a simmer and cook for 8-10 minutes, or until the dumplings float to the surface.

  • Remove the dumplings with a slotted spoon and serve hot in soups, stews, or as a side dish.

Notes

You can freeze the dumplings before cooking. Freeze them on a baking sheet and transfer to a zip-top bag once solid.
