Ingredients
Crust
- 1/2 cup wasabi peas (finely crushed)
- 1/2 cup panko breadcrumbs
- Salt, to taste
Coating Mixture
- 1 egg
- 2 tablespoons mayonnaise
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
Halibut
- 2 halibut filets (about 6 oz each)
- Olive oil spray
Instructions
- Mix dry ingredients. In a bowl, combine the finely crushed wasabi peas, panko breadcrumbs, and a pinch of salt. Stir until evenly mixed to create the crunchy crust mixture.
- Mix wet ingredients. In a separate bowl, whisk together the egg, mayonnaise, soy sauce, and sesame oil until smooth and well combined, forming the coating mixture.
- Bread the halibut filets. Pat the halibut filets dry with a paper towel. Dip each filet into the egg mixture, coating thoroughly, particularly on the top side. Then press the filet into the wasabi pea-panko mixture, gently pressing to help the crust adhere evenly to the top of each fillet.
- Preheat the air fryer. Lightly spray the air fryer basket with olive oil spray and preheat it to 375°F. If your air fryer does not have a preheat setting, run it empty for about 5 minutes to heat up.
- Arrange the halibut in the air fryer. Place the crusted halibut filets in the air fryer basket, crust-side up, leaving about 2 inches of space between each filet for even cooking. Lightly spray the tops of the fillets with olive oil spray to promote browning of the crust.
- Air fry the halibut. Cook the halibut in the air fryer for 8 to 10 minutes, depending on the thickness of the filets. The crust should turn golden brown, and the fish should become opaque and flake easily with a fork. The internal temperature should reach between 135°F and 140°F for perfect doneness.

- Finely crush wasabi peas using a food processor or place them in a sealed bag and crush with a rolling pin to achieve a crunchy crust.
