This Air Fryer Halibut recipe features tender halibut filets coated with a crunchy, flavorful crust made from crushed wasabi peas and panko breadcrumbs. The fish is lightly seasoned and air-fried to golden perfection, delivering a deliciously crisp exterior with moist, flaky fish inside in just 20 minutes. This quick and easy seafood dish is perfect for a healthy weeknight dinner or a special occasion.

  • Total Time: 20 minutes
  • Yield: 2 servings

Ingredients

Crust

  • 1/2 cup wasabi peas (finely crushed)
  • 1/2 cup panko breadcrumbs
  • Salt, to taste

Coating Mixture

  • 1 egg
  • 2 tablespoons mayonnaise
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil

Halibut

  • 2 halibut filets (about 6 oz each)
  • Olive oil spray

Instructions

  1. Mix dry ingredients. In a bowl, combine the finely crushed wasabi peas, panko breadcrumbs, and a pinch of salt. Stir until evenly mixed to create the crunchy crust mixture.
  2. Mix wet ingredients. In a separate bowl, whisk together the egg, mayonnaise, soy sauce, and sesame oil until smooth and well combined, forming the coating mixture.
  3. Bread the halibut filets. Pat the halibut filets dry with a paper towel. Dip each filet into the egg mixture, coating thoroughly, particularly on the top side. Then press the filet into the wasabi pea-panko mixture, gently pressing to help the crust adhere evenly to the top of each fillet.
  4. Preheat the air fryer. Lightly spray the air fryer basket with olive oil spray and preheat it to 375°F. If your air fryer does not have a preheat setting, run it empty for about 5 minutes to heat up.
  5. Arrange the halibut in the air fryer. Place the crusted halibut filets in the air fryer basket, crust-side up, leaving about 2 inches of space between each filet for even cooking. Lightly spray the tops of the fillets with olive oil spray to promote browning of the crust.
  6. Air fry the halibut. Cook the halibut in the air fryer for 8 to 10 minutes, depending on the thickness of the filets. The crust should turn golden brown, and the fish should become opaque and flake easily with a fork. The internal temperature should reach between 135°F and 140°F for perfect doneness.

Notes

  • Finely crush wasabi peas using a food processor or place them in a sealed bag and crush with a rolling pin to achieve a crunchy crust.
  • Ensure the halibut filets are patted dry to help the coating adhere better.
  • Monitor cooking time closely as air fryer models vary; thicker filets may require extra time.
  • Using olive oil spray helps create a crisp, golden crust without adding too much oil.
