Meat and Seasoning
- 1/2 tbsp olive oil
- 1 lb ground beef
- 2 tbsp taco seasoning
- 3 tbsp water
Vegetables and Cheese
- 1 small red onion, diced
- 2 cups Mexican blend shredded cheese
Tortillas
- 10 flour tortillas
Instructions
- Brown the beef: Heat the olive oil in a large cast-iron skillet over medium-high heat. When hot, add the ground beef and cook without moving it for 4-5 minutes on each side or until browned.
- Cook the ground beef thoroughly: Use a meat masher to break up the beef. Add the diced red onion and continue cooking for 3-4 minutes until the beef is fully cooked through and no longer pink. Stir in the taco seasoning followed by the water.
- Add cheese to the beef mixture: Mix in 1.5 cups of the shredded Mexican blend cheese into the beef mixture and toss until melted and well combined.
- Preheat the air fryer: Set the air fryer to 375°F and allow it to preheat while you prepare the tacos.
- Fill the tortillas: Spread about 3 tablespoons of the beef and cheese mixture onto one half of each tortilla. Sprinkle with the remaining cheese, fold the tortillas over, and press down gently.
- Air fry the tacos: Arrange the filled tortillas in a single layer in the air fryer basket. Lightly spray the top of each with olive oil spray and cook for approximately 4 minutes until the tortillas are crisp and golden. Repeat if necessary with remaining tacos.
- Serve: Garnish with fresh parsley if desired and serve immediately for the best flavor and texture.

- Use a meat masher or spatula to break up the ground beef evenly and ensure thorough cooking.
- If you prefer a spicier taco, add extra taco seasoning or fresh jalapeños to the beef mixture.
- Lightly spraying the tortillas with olive oil before air frying helps achieve a crispier texture.
- Fresh parsley is optional but adds a fresh flavor and color when serving.
- Flour tortillas are recommended for best crisping results, but corn tortillas can be used if preferred.
