Sweet Potato Jacket
- 1 sweet potato
- 1 tbsp olive oil
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/3 tsp pepper
- 1 tsp dry basil

- 1 cup Greek yogurt
Instructions
- Preheat and prepare sweet potato: Preheat the air fryer to 400°F (200°C). Pierce the sweet potato several times with a fork to allow steam to escape during cooking. Rub the sweet potato evenly with olive oil, paprika, dry basil, salt, and pepper to coat fully.
- Cook the sweet potato: Place the seasoned sweet potato in the air fryer basket. Cook for 30-40 minutes or until the sweet potato is tender inside and the skin is crispy on the outside.
- Cool and slice: Carefully remove the sweet potato from the air fryer and let it cool slightly for a few minutes. Cut the sweet potato in half lengthwise to create jackets.
- Serve with yogurt topping: Top each sweet potato jacket with a generous dollop of Greek yogurt. Optionally garnish with additional salt, pepper, and dry basil. Serve warm and enjoy!
