Ingredients

Filling

  • 500 g frozen chopped spinach, defrosted and squeezed of excess moisture
  • 200 g feta cheese, crumbled
  • 2 Tbsp cream cheese
  • Handful of mint leaves, chopped
  • 1 small onion, minced (or 1 thinly sliced green onion as an alternative)
  • Juice of 1/2 lemon
  • Salt and pepper to taste

Assembly

  • 4-8 sheets filo pastry
  • 1 egg, whisked (for egg wash)
  • Oil, for sautéing the onion

Instructions

  1. Prepare the Spinach: Defrost the frozen chopped spinach either by leaving it at room temperature for a few hours or using the microwave’s defrost setting. Place spinach in a sieve or colander and press it firmly with a heavy bowl to squeeze out as much liquid as possible.
  2. Set Aside Spinach: Transfer the squeezed spinach into a large mixing bowl and set aside.
  3. Sauté Onion: Heat a small amount of oil in a frying pan and cook the minced onion until soft and translucent. Alternatively, if you prefer, air fry the onion briefly in a small pan inside the air fryer basket.
  4. Make the Filling: Add the sautéed onion to the spinach bowl. Mix in the crumbled feta, cream cheese, lemon juice, chopped mint leaves, salt, and pepper. If the mixture feels dry, add a little extra cream cheese to help bind the filling into a creamy consistency.
  5. Preheat Air Fryer: Set the air fryer to 180°C (360°F) and allow it to preheat.
  6. Prepare Egg Wash: In a small bowl, whisk the egg thoroughly to use for brushing on the filo pastry.
  7. Assemble Rolls: Lay out 1-2 sheets of filo pastry. Place a scoop of filling along one side of the pastry. Brush the edges of the filo with egg wash, fold the sides inward, and then roll tightly like a burrito.
  8. Brush Rolls: Lightly brush the outside of each roll with the egg wash to ensure a golden, crispy finish.
  9. Cook Rolls: Place two rolls in the air fryer basket and cook for 15 minutes. The filo should be golden brown and crispy, and the filling warmed through. Repeat with remaining rolls as needed.
