Chicken
- 4 skinless chicken breasts, cut into 1 inch cubes
- 19oz / 540g chicken thighs, cut into 1 inch cubes
Marinade
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- ½ teaspoon Dijon mustard
- ¼ teaspoon red wine vinegar
- 1 teaspoon oregano or Italian herbs
- ½ teaspoon smoked paprika
- ⅓ – ½ teaspoon flaked salt, to taste
- ¼ teaspoon black pepper
Instructions
- Prepare the chicken: Cut the skinless chicken breasts and thighs into bite-sized, 1 inch cubes, ensuring uniform pieces for even cooking.
- Make the marinade: In a large bowl, combine olive oil, minced garlic, Dijon mustard, red wine vinegar, oregano or Italian herbs, smoked paprika, flaked salt, and black pepper. Whisk well until all ingredients are fully incorporated.
- Marinate the chicken: Add the chicken cubes to the marinade and toss thoroughly to coat each piece evenly. Allow the chicken to marinate for at least 15-30 minutes to absorb the flavors; for best results, marinate up to 2 hours in the refrigerator.
- Preheat the air fryer: Set your air fryer to 400°F (200°C) and allow it to preheat for about 3-5 minutes.
- Cook the chicken bites: Place the marinated chicken pieces in the air fryer basket in a single layer, avoiding overcrowding. Cook for 10-12 minutes, shaking or flipping halfway through to ensure even crisping, until the chicken is cooked through with an internal temperature of 165°F (74°C) and golden brown on the outside.
- Serve: Remove the chicken bites from the air fryer and let them rest for a couple of minutes before serving. These bites are perfect as a snack, appetizer, or addition to salads and wraps.
Notes
- For juicier chicken, use a mix of breast and thighs as suggested; thighs tend to stay moister.
- Adjust the amount of salt and spices according to your taste preference.
- Make sure not to overcrowd the air fryer basket to allow proper air circulation and crispiness.
- Use a meat thermometer to ensure the chicken is safely cooked to 165°F (74°C).
