Ingredients
Filo Dough Wrap
- 15 sheets filo dough
- 1 egg yolk beaten with 1 tablespoon water (egg wash)
- 2 tablespoons unsalted butter, melted
Filling
- 1 wheel of brie (8 ounces / 226g), rind removed
- 3 tablespoons brown sugar
- 1/4 cup (70g) whole berry cranberry sauce
- 3 tablespoons chopped pecans
Garnish
- Fresh thyme (optional)
Instructions
- Prepare the filling: In a small bowl, mix the brown sugar, cranberry sauce, and chopped pecans until combined. Set aside.
- Assemble the brie: Remove the rind from the brie wheel carefully using a sharp knife. Spread the cranberry mixture evenly over the top of the brie.
- Wrap the brie: Lay out a sheet of filo dough on a clean surface and brush lightly with melted butter. Layer additional sheets, brushing each with butter, until all 15 sheets are stacked. Place the brie in the center of the filo stack.
- Encase the cheese: Fold the filo dough over the brie, pleating as necessary to completely cover it. Brush the outside with the prepared egg wash for a shiny, golden finish.
- Preheat the air fryer: Set your air fryer to 350°F (175°C) and let it preheat for about 5 minutes.
- Cook the baked brie: Place the wrapped brie carefully into the air fryer basket. Cook for 12-15 minutes or until the filo dough is golden brown and crispy.
- Serve: Remove carefully and let cool for a few minutes. Garnish with fresh thyme if desired. Serve warm with crackers or sliced baguette.
Notes
- Be gentle when handling filo dough as it is very delicate and can tear easily.
- Removing the rind from brie ensures better melting and flavor absorption from the cranberry filling.
- You can substitute pecans for walnuts or almonds if preferred.
- If you don’t have an air fryer, this recipe can also be baked in a conventional oven at 375°F (190°C) for 20-25 minutes.
- Let the baked brie cool slightly before slicing to avoid spills from hot melted cheese.
