- 2 whole wheat pitas or small pieces of naan
Instructions
- Cook the Chickpeas: In a large skillet over high heat, add 1 tablespoon of olive oil and the rinsed, drained, and dried chickpeas. Stir well to coat the chickpeas evenly with the olive oil.
- Add the Spices: Immediately sprinkle garlic powder, dried thyme, dried oregano, and paprika over the chickpeas. Reduce the heat to medium-high and cook, stirring occasionally, for 9-10 minutes until the chickpeas are golden brown and slightly crispy.
- Prepare the Tzatziki Sauce: In a small bowl, combine 1 tablespoon olive oil, 2 tablespoons Greek yogurt, 1 teaspoon lemon juice, grated cucumber, and a pinch of salt. Stir thoroughly until smooth and well mixed.
- Assemble the Gyros: Once the chickpeas are cooked, divide them evenly between the whole wheat pitas or naan pieces. Top each with a generous dollop of the tzatziki sauce, followed by cucumber slices, tomato slices, and diced red onion to taste.
